
Tropical Mango Shrimp Scampi
Ingredients
- 1 ½ cups FLAV-R-PAC® Fruit Favorites Mango Cubes
- 16 ounces Linguine Pasta cooked
- 4 tbsp Olive Oil
- 16 – 20 Shrimp deveined
- 2 ½ tbsp Garlic peeled, minced
- ½ cup Dry White Wine
- 2 cups Orange Juice
- 4 tbsp Unsalted Butter
- 1 tsp Kosher Salt
- 1 tsp Black Pepper ground
Instructions
- In a large skillet, heat 2 tablespoons olive oil over medium high heat. Combine shrimp with 1 tablespoon salt and black pepper, add them to the pan and cook until they have turned pink, about 2-3 minutes.
- Add FLAV-R-PAC® Fruit Favorites Mango Cubes and garlic. Stir until fragrant and mango begins to carmelize, 2-3 minutes.
- Deglaze with wine and orange juice. Bring to a boil. Add butter and whisk until combined, 2 minutes.
- Add cooked pasta; stir well and season with salt and pepper.
- Serve immediately
