Tropical Mango Shrimp Scampi

Ingredients
  

  • 1 ½ cups FLAV-R-PAC® Fruit Favorites Mango Cubes
  • 16 ounces Linguine Pasta cooked
  • 4 tbsp Olive Oil
  • 16 – 20 Shrimp deveined
  • 2 ½ tbsp Garlic peeled, minced
  • ½ cup Dry White Wine
  • 2 cups Orange Juice
  • 4 tbsp Unsalted Butter
  • 1 tsp Kosher Salt
  • 1 tsp Black Pepper ground

Instructions
 

  • In a large skillet, heat 2 tablespoons olive oil over medium high heat. Combine shrimp with 1 tablespoon salt and black pepper, add them to the pan and cook until they have turned pink, about 2-3 minutes.
  • Add FLAV-R-PAC® Fruit Favorites Mango Cubes and garlic. Stir until fragrant and mango begins to carmelize, 2-3 minutes.
  • Deglaze with wine and orange juice. Bring to a boil. Add butter and whisk until combined, 2 minutes.
  • Add cooked pasta; stir well and season with salt and pepper.
  • Serve immediately
