Cauliflower Tots

Ingredients
  

  • 2 c. FLAV-R-PAC® Riced Cauliflower
  • 1 Egg beaten
  • 1/2 c. cheddar cheese
  • 1/2 c. Parmesan
  • 1/3 c. panko or whole wheat breadcrumbs
  • 1/4 c. chives
  • 1 Tablespoon finely chopped fresh parsley
  • Salt and Pepper to taste

Instructions
 

  • Preheat over to 375 degrees F. Grease a large cookie sheet and place cauliflower on cookie sheet and roast for 15 minutes. Remove from oven and let cool.
  • Once cooled place cauliflower on cheesecloth or a tea towel and drain out the excess water.
  • Transfer cauliflower to a large bowl and add egg, cheeses, breadcrumbs chives and parsley. Season with salt and pepper to taste.
  • Spoon about 1 Tablespoon of the mixture into your hand and roll into a tater tot shape. Place on baking sheet and bake 15-20 minutes or until golden brown.
  • Serve lightly salted, plain or with dipping sauce.
