Preheat over to 375 degrees F. Grease a large cookie sheet and place cauliflower on cookie sheet and roast for 15 minutes. Remove from oven and let cool.
Once cooled place cauliflower on cheesecloth or a tea towel and drain out the excess water.
Transfer cauliflower to a large bowl and add egg, cheeses, breadcrumbs chives and parsley. Season with salt and pepper to taste.
Spoon about 1 Tablespoon of the mixture into your hand and roll into a tater tot shape. Place on baking sheet and bake 15-20 minutes or until golden brown.
Serve lightly salted, plain or with dipping sauce.
