
Carrot Cake Overnight Oats
Ingredients
- 1 cup steel cut oats
- 1 can coconut milk
- 2 1/2 cups water
- 8 dates pitted and chopped
- 1/2 teaspoon salt
- 1/4 teaspoon cardamon
- 2 teaspoons ground ginger
- 2 teaspoons cinnamon
- 1 12oz package FLAV-R-PAC® Frozen Crinkle Cut Carrots
- 2 tablespoons coconut oil
- 1 tablespoon vanilla
- 1/3 cup maple syrup
- Pumpkin seeds sesame seeds, sunflower seeds or toppings of your choice
Instructions
- Put everything but the vanilla, honey, and toppings in a crock pot. Cook on low for 8 hours.
- Add the maple syrup and vanilla and stir to combine, mashing any carrots that have not broken down during cooking. Serve topped with seeds, nuts, bananas or any other toppings you choose.
