In a medium sauce pan, combine the wine, sugar, tarragon, thyme, salt, and black pepper.
Bring to a boil. Reduce by half.
Add FLAV-R-PAC® Fruit Favorites Peach Cubes and simmer over moderate heat, until tender, about 5 minutes.
Remove from heat, reserve.
Serve 5 scallops with ¼ cup of poached peaches.
