Riesling Poached Peaches With Pan Seared Scallops

Ingredients
  

  • 1 cup FLAV-R-PAC® Fruit Favorites Peach Cubes
  • 2 cups Riesling wine
  • 1 tbsp Granulated Sugar
  • 1 tbsp Tarragon Sprigs chopped
  • 1 tbsp Thyme Sprigs chopped
  • ½ tsp Sea Salt
  • ¼ tsp Black Pepper cracked
  • 20 Scallops cleaned, pan seared

Instructions
 

  • In a medium sauce pan, combine the wine, sugar, tarragon, thyme, salt, and black pepper.
  • Bring to a boil. Reduce by half.
  • Add FLAV-R-PAC® Fruit Favorites Peach Cubes and simmer over moderate heat, until tender, about 5 minutes.
  • Remove from heat, reserve.
  • Serve 5 scallops with ¼ cup of poached peaches.
