Tequila Peach Relish With Roasted Chicken

Ingredients
  

  • 1 cup FLAV-R-PAC® Fruit Favorites Peach Cubes
  • Whole Chicken quartered (about 4 lbs.)
  • 4 tbsp Olive Oil
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper ground
  • ½ cup Red Onion peeled, ¼” diced
  • ¾ cup White Tequila
  • ½ cup Sweet Baby Ray’s BBQ sauce
  • ¼ cup Green Onions sliced
  • ½ tbsp Granulated Sugar
  • 2 tbsp Cilantro chopped

Instructions
 

  • Preheat oven to 450° F. Pat chicken dry with paper towels. Rub chicken with 1 tablespoon oil; season with salt and pepper. Arrange, skin-side up, on a rimmed baking sheet.
  • Roast until golden and a thermometer inserted into thickest part of breast (without touching bone) registers 165° F, about 30 minutes.
  • In a small saucepot over medium heat, add FLAV-R-PAC® Fruit Favorites Peach Cubes and red onion. Saute until caramelized.
  • Deglaze the pan with tequila and bring to a simmer to cook out the alcohol.
  • Add BBQ sauce, green onions, sugar, and cilantro.
  • Serve ½ cup of relish with quarter of chicken.
