
Riesling Poached Peaches With Pan Seared Scallops
Ingredients
- 1 cup FLAV-R-PAC® Fruit Favorites Peach Cubes
- 2 cups Riesling wine
- 1 tbsp Granulated Sugar
- 1 tbsp Tarragon Sprigs chopped
- 1 tbsp Thyme Sprigs chopped
- ½ tsp Sea Salt
- ¼ tsp Black Pepper cracked
- 20 Scallops cleaned, pan seared
Instructions
- In a medium sauce pan, combine the wine, sugar, tarragon, thyme, salt, and black pepper.
- Bring to a boil. Reduce by half.
- Add FLAV-R-PAC® Fruit Favorites Peach Cubes and simmer over moderate heat, until tender, about 5 minutes.
- Remove from heat, reserve.
- Serve 5 scallops with ¼ cup of poached peaches.
