
Roasted Corn Salsa
Ingredients
- 2 cups FLAV-R-PAC® Whole Kernel Corn thawed
- 1 can black beans drained and rinsed
- 1 small red bell pepper seeded and chopped
- ½ red onion chopped
- 2 teaspoons ground cumin
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinaigrette
- 1 lime juiced
- Salt and pepper to taste
Instructions
- Sauté corn in dry cast iron pan until lightly charred. Combine all ingredients in bowl and let stand for at least 15 minutes. Toss and serve.
