Roasted Corn Salsa

Ingredients
  

  • 2 cups FLAV-R-PAC® Whole Kernel Corn thawed
  • 1 can black beans drained and rinsed
  • 1 small red bell pepper seeded and chopped
  • ½ red onion chopped
  • 2 teaspoons ground cumin
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinaigrette
  • 1 lime juiced
  • Salt and pepper to taste

Instructions
 

  • Sauté corn in dry cast iron pan until lightly charred. Combine all ingredients in bowl and let stand for at least 15 minutes. Toss and serve.
