Peach & Tomato Salad
Ingredients
- 2 cups FLAV-R-PAC® Fruit Favorites Peach Cubes
- ¼ cup Sherry Vinegar
- ¼ cup Red Onion peeled, ¼” diced
- ½ tsp Kosher Salt
- ¼ tsp Black Pepper ground
- 1/3 cup Mayonnaise
- 2 cups Grape Tomatoes halved
- 2 tbsp Shallots peeled, ¼” diced
- 2 tbsp Basil chiffonade
- ¾ cup Feta Cheese crumbled
- ¼ tsp Sea Salt
- ¼ tsp Black Pepper ground
Instructions
- To make dressing: In a bowl, combine sherry vinegar, red onion, kosher salt, black pepper, and mayonnaise.
- To make salad: In a separate bowl combine tomatoes, shallots, basil and crumble feta. Toss in FLAV-R-PAC® Fruit Favorites Peach Cubes and coat in dressing.
- Season with sea salt and black pepper.
- Chill and serve.
