Summer Succotash

Ingredients
  

  • cups Flav-R-PacⓇ frozen baby lima beans
  • cups Flav-R-PacⓇ frozen whole kernel corn
  • 2 tablespoons unsalted butter
  • 1 cup cherry tomatoes halved
  • ½ cup fresh basil leaves torn
  • 2 green onions thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a medium microwave-safe bowl combine lima beans, corn, and butter. Cover the bowl with plastic wrap and poke a few holes in the plastic wrap to allow steam to escape. Microwave on high for 3 minutes, stir, then cook about 3 minutes more or until tender.
  • Allow to cool for 5 minutes then stir in tomatoes, basil, green onion, salt, and pepper.
