
Summer Succotash
Ingredients
- 1½ cups Flav-R-PacⓇ frozen baby lima beans
- 1½ cups Flav-R-PacⓇ frozen whole kernel corn
- 2 tablespoons unsalted butter
- 1 cup cherry tomatoes halved
- ½ cup fresh basil leaves torn
- 2 green onions thinly sliced
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a medium microwave-safe bowl combine lima beans, corn, and butter. Cover the bowl with plastic wrap and poke a few holes in the plastic wrap to allow steam to escape. Microwave on high for 3 minutes, stir, then cook about 3 minutes more or until tender.
- Allow to cool for 5 minutes then stir in tomatoes, basil, green onion, salt, and pepper.
