
Spinach Orzo Soup

Ingredients
- 1 large onion chopped
- 2 cloves garlic chopped
- 1 12 oz package FLAV-R-PAC® Chopped Spinach
- 1 12 oz package FLAV-R-PAC® Lima Beans
- 1 15 oz can diced tomatoes
- 1 15 oz can chickpeas drained
- 1 cup dried barley
- 6 cups chicken or vegetable stock
- olive oil
- 2 teaspoons salt or to taste
- 2 teaspoon pepper or to taste
- 2 Tablespoons Italian seasoning
- 1 16 oz package orzo pasta
- Parmesan cheese optional
Instructions
- Preheat a large, heavy bottom, soup pot. Drizzle with olive oil. Add onions and sauté until tender. Add garlic and sauté for 2 – 3 minutes. Add canned tomatoes, spinach, lima beans, tomatoes, chickpeas, barley, stock, and seasonings. Bring to a boil and reduce heat to medium.
- Add orzo cook for 20 minutes, or until orzo and barley are tender. Serve with grated Parmesan cheese.
