Spinach Orzo Soup

Ingredients
  

  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 1 12 oz package FLAV-R-PAC® Chopped Spinach
  • 1 12 oz package FLAV-R-PAC® Lima Beans
  • 1 15 oz can diced tomatoes
  • 1 15 oz can chickpeas drained
  • 1 cup dried barley
  • 6 cups chicken or vegetable stock
  • olive oil
  • 2 teaspoons salt or to taste
  • 2 teaspoon pepper or to taste
  • 2 Tablespoons Italian seasoning
  • 1 16 oz package orzo pasta
  • Parmesan cheese optional

Instructions
 

  • Preheat a large, heavy bottom, soup pot. Drizzle with olive oil. Add onions and sauté until tender. Add garlic and sauté for 2 – 3 minutes. Add canned tomatoes, spinach, lima beans, tomatoes, chickpeas, barley, stock, and seasonings. Bring to a boil and reduce heat to medium.
  • Add orzo cook for 20 minutes, or until orzo and barley are tender. Serve with grated Parmesan cheese.
