- 2 packages Flav-R-Pac Ancient Grains Quinoa & Kale Blend
- 1 package Flav-R-Pac Brussels Sprouts
- 1 Medium Sweet Potato, chopped
- 1 cup butternut squash, diced
- 2 celery stalks, chopped
- 1 Tablespoon minced garlic
- 1/2 Tablespoon dried thyme
- 1/2 Tablespoon dried rosemary
- 1/2 Tablespoon dried sage
- 1/2 Tablespoon cinnamon
- Salt and pepper to taste
- 1/4 cup pecans, chopped
- Seeds of one pomegranate (optional)
- 1 Tablespoon apple cider vinegar
- 1/2 tablespoon fresh rosemary
- 1/2 tablespoon fresh thyme
- Cook Ancient Grains Quinoa & Kale per package instructions
- While the quinoa is cooking, preheat the oven to 400ºF.
- Toss your diced sweet potatoes, squash, brussels sprouts, celery, and garlic in a large bowl. Add spices, salt and pepper, then drizzle with oil and toss to combine. Transfer to a baking sheet and roast for 15 – 20 minutes, flipping half way through.
- Assemble stuffing by combining cooked quinoa, potatoes and pecans in a large mixing bowl. Stir together and add apple cider vinegar, rosemary and thyme. Toss to combine. Taste and adjust seasonings as needed.
- Put back in the oven to roast slightly if needed. Serve warm topped with pomegranate seeds.
