Summer Succotash


1½ cups Flav-R-Pac frozen baby lima beans

1½ cups Flav-R-Pac frozen whole kernel corn

2 tablespoons unsalted butter

1 cup cherry tomatoes, halved

½ cup fresh basil leaves, torn

2 green onions, thinly sliced

½ teaspoon salt

¼ teaspoon black pepper



  1. In a medium microwave-safe bowl combine lima beans, corn, and butter. Cover the bowl with plastic wrap and poke a few holes in the plastic wrap to allow steam to escape. Microwave on high for 3 minutes, stir, then cook about 3 minutes more or until tender.
  2. Allow to cool for 5 minutes then stir in tomatoes, basil, green onion, salt, and pepper.
