STRAWBERRY BRUSCHETTA BAKED CHICKEN
(6 – 6 oz servings*)
1 cup Flav-R-Pac Fruit Favorites Strawberry Cubes
1 cup Yellow Grape Tomatoes, quartered
¾ cup Mozzarella Pearls, halved
4 tbsp Balsamic Vinegar
4 tbsp Extra Virgin Olive Oil
2 tsp Kosher Salt
¼ tsp Black Pepper, ground
¼ cup Basil, chiffonade
6 / 4 oz Chicken Breasts
Heat oil in 9” skillet over medium high heat
Season chicken breast with 2 tsp of salt and 1 tsp of black pepper. Sear on each side until golden brown. About 5-8 minutes each and cooked to 165° F.
In a 2 qt mixing bowl, combine Flav-R-Pac Fruit Favorites Strawberry Cubes, tomatoes, mozzarella, balsamic vinegar, remaining olive oil, salt, black pepper, and basil. Add to sauté pan, caramelize for 3 minutes.
Serve ½ cup of strawberry Bruschetta with each chicken breast.
*1 serving = 4 oz ( ½ cup) strawberry bruschetta with one cooked chicken breast.
