Autumn Quinoa "Stuffing"

 

  • 2 packages Flav-R-Pac Ancient Grains Quinoa & Kale Blend
  • 1 package Flav-R-Pac Brussels Sprouts
  • 1 Medium Sweet Potato, chopped
  • 1 cup butternut squash, diced
  • 2 celery stalks, chopped
  • 1 Tablespoon minced garlic
  • 1/2 Tablespoon dried thyme
  • 1/2 Tablespoon dried rosemary
  • 1/2 Tablespoon dried sage
  • 1/2 Tablespoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup pecans, chopped
  • Seeds of one pomegranate (optional)
  • 1 Tablespoon apple cider vinegar
  • 1/2 tablespoon fresh rosemary
  • 1/2 tablespoon fresh thyme

 

  1. Cook Ancient Grains Quinoa & Kale per package instructions
  2. While the quinoa is cooking, preheat the oven to 400ºF.
  3. Toss your diced sweet potatoes, squash, brussels sprouts, celery, and garlic in a large bowl. Add spices, salt and pepper, then drizzle with oil and toss to combine. Transfer to a baking sheet and roast for 15 – 20 minutes, flipping half way through.
  4. Assemble stuffing by combining cooked quinoa, potatoes and pecans in a large mixing bowl. Stir together and add apple cider vinegar, rosemary and thyme. Toss to combine. Taste and adjust seasonings as needed.
  5. Put back in the oven to roast slightly if needed. Serve warm topped with pomegranate seeds.
