Riesling Poached Peaches With Pan Seared Scallops

 

1 cup Flav-R-Pac Fruit Favorites Peach Cubes
2 cups Riesling
1 tbsp Granulated Sugar
1 tbsp Tarragon Sprigs, chopped
1 tbsp Thyme Sprigs, chopped
½ tsp Sea Salt
¼ tsp Black Pepper, cracked
20 Scallops, cleaned, pan seared

In a medium sauce pan, combine the wine, sugar, tarragon, thyme, salt, and black pepper.
Bring to a boil. Reduce by half.
Add Flav-R-Pac Fruit Favorites Peach Cubes and simmer over moderate heat, until tender, about 5 minutes.
Remove from heat, reserve.
Serve 5 scallops with ¼ cup of poached peaches.
