Apple Bacon Turkey Burgers

 

2 cups Flav-R-Pac Fruit Favorites Apple Cubes
½ lb Applewood Smoked Bacon, ½” diced
½ cup Yellow Onion, peeled, ¼” diced
2 – Thyme, chopped
1 tbsp Garlic, peeled, minced
1 tsp Fennel Seeds, ground
1 tbsp Lemon Juice
2 tbsp Chicken Stock
2 tbsp Granulated Sugar
½ tsp Kosher Salt
¼ tsp Black Pepper, ground
8 Brioche Buns, toasted
8 Turkey Burger patties
8 ounces Brie Cheese, sliced
2 cups Arugula

PREPARATION STEPS

Heat a large skillet, add the bacon and cook over moderate heat until crisp, about 4 minutes.

Using a slotted spoon, transfer the bacon to paper towels to drain. Pour off all but 3 tablespoons of the fat from the skillet.

Add the onion, cook over moderate heat until softened, about 3 minutes. Add Flav-R-Pac Fruit Favorites Apple Cubes, thyme, and garlic. Cover and cook over moderately low heat, stirring occasionally, until softened, about 8 minutes.

Add the fennel seeds and cook, stirring, until fragrant, about 1 minute. Stir in the lemon juice and sugar.

Remove the chutney from the heat, season with salt and pepper and let cool to room temperature. Discard the thyme, stir in the bacon.

Heat grill to 375° F. Cook turkey burgers to an internal temperature of 165° F. Top with sliced brie cheese and allow to melt.

To build: On heel of toasted brioche bun layer cooked turkey burger and brie cheese, with ¼ cup fresh arugula. Spread ¼ cup of apple-bacon chutney on crown and finish.

*1 serving = 1 turkey burger, 1 slice of brie cheese, ¼ cup fresh arugula, 2 ounces (¼ cup) of apple bacon chutney on bun.
