Spinach Orzo Soup

 

1 large onion, chopped
2 cloves garlic, chopped
1 12 oz package Flav-R-Pac Chopped Spinach
1 12 oz package Flav-R-Pac Lima Beans
1 – 15 oz can diced tomatoes
1 – 15 oz can chickpeas drained
1 cup dried barley
6 cups chicken or vegetable stock
olive oil
2 teaspoons salt, or to taste
2 teaspoon pepper, or to taste
2 Tablespoons Italian seasoning
1 – 16 oz package orzo pasta
Parmesan cheese (optional)

 

1. Preheat a large, heavy bottom, soup pot. Drizzle with olive oil. Add onions and saute until tender. Add garlic and saute for 2 – 3 minutes. Add canned tomatoes, spinach, lima beans, tomatoes, chickpeas, barley, stock, and seasonings. Bring to a boil and reduce heat to medium.

2. Add orzo cook for 20 minutes, or until orzo and barley are tender. Serve with grated Parmesan cheese.
