Carrot Cake Overnight Oats

 

1 cup steel cut oats
1 can coconut milk
2 1/2 cups water
8 dated, pitted and chopped
1/2 teaspoon salt
1/4 teaspoon cardamon
2 teaspoons ground ginger
2 teaspoons cinnamon
1 12 oz. package Flav-R-Pac Frozen Crinkle Cut Carrots
2 tablespoons coconut oil
1 tablespoon vanilla
1/3 cup maple syrup
Pumpkin seeds, sesame seeds, sunflower seeds or toppings of your choice

1. Put everything but the vanilla, honey, and toppings in a crock pot. Cook on low for 8 hours.

2. Add the maple syrup and vanilla and stir to combine, mashing any carrots that have not broken down during cooking. Serve topped with seeds, nuts, bananas or any other toppings you choose.
