Simple Healthy Banana Blueberry Pancakes

 

2 ripe bananas

2 eggs

1 teaspoon vanilla extract

½ cup old fashioned oats

1 teaspoon baking powder

½ cup Flav-R-Pac frozen blueberries

PREPARATION

1. Combine bananas, eggs, vanilla and oats in a blender. Pulse until combined. Add baking powder and pulse quickly until just combined.

2. Heat a skillet to medium and add in a scoop of the pancake batter. Smooth out to form an even layer. Drop blueberries onto pancake while it is cooking. Cook for about 2 to 3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1 to 2 minutes.

3. Serve with maple syrup or your favorite toppings.

4. Enjoy!
