Cauliflower Tots

 

1 12 oz. Package Flav-R-Pac Frozen Cauliflower Florets, thawed

1 Egg, beaten

1/2 c. cheddar cheese

1/2 c. Parmesan

1/3 c. panko or whole wheat breadcrumbs

1/4 c. chives

1 Tablespoon finely chopped fresh parsley

Salt and Pepper to taste

 

Preheat over to 375 degrees F. Grease a large cookie sheet and set a side.

Shred the cauliflower florets in a food processor fitted with the blade attachment until cauliflower resembles small grains of rice. Place cauliflower on cookie sheet and roast for 15 minutes. Remove from oven and let cool.

Once cooled place cauliflower on cheesecloth or a tea towel and drain out the excess water.

Transfer cauliflower to a large bowl and add egg, cheeses, breadcrumbs chives and parsley. Season with sale and pepper to taste.

Spoon about 1 Tablespoon of the mixture into your hand and roll into a tater tot shape. Place on baking sheet and bake 15-20 minutes or until golden brown.

Serve lightly salted, plain or with your favorite dipping sauce.
