Roasted Corn Salsa

 

 

2 cups Flav-R-Pac frozen corn kernels, thawed

1 can black beans, drained and rinsed

1 small red bell pepper, seeded and chopped

½ red onion, chopped

2 teaspoons ground cumin

2 tablespoons olive oil

1 tablespoon balsamic vinaigrette

1 lime, juiced

Salt and pepper, to taste

 

Serves 4

 

Sauté corn in dry cast iron pan until lightly charred. Combine all ingredients in bowl and let stand for at least 15 minutes. Toss and serve.
